My Story -Qurrat ul ain

One of my earliest memories is of watching my grandma planting vegetables on the back porch of her garden and preparing healthy meals. I was her litter helper in planting, thinning, weeding, and thinning out veggie plants. It was fun to watch climbing vegetables and rewarding to eat fresh home-grown vegetables and fruits like peas, cucumbers, tomatoes, and pomegranates.

 

Grandma was quite innovative in her kitchen and she used to cook wonderful meals for the family at various festivals. It was her company and passion for healthy eating that I developed an appreciation of clean food and a healthy lifestyle as a child.

 

I was the only vegetarian in the family, it was difficult at first but soon I developed a habit of making vegetable recipes, and I think I used every saucepan available. Cooking innovative meals and sharing them with my family was a serious hobby. Unfortunately, a demanding medical career and leaving the home country to pursue higher studies in the UK left little time for my kitchen endeavours.

 

It was my doctorate in Public Health when I studied in depth how certain perceptions, behaviours, practices and barriers affect eating choices.

 

As a vegetarian PhD student and living in one of the rural areas of the UK I often struggled to find a variety of vegetarian food options in my local convenience store though it was the only option available within a walking distance. It was the point when I started making my own vegan and vegetarian recipes shared with my colleagues and neighbours and approached the possibility of creating Ainee's Greenbox for you.

 

I have loved seeing the happiness and amazement on the faces of people who have tasted Ainee's Greenbox products and am excited to share more!
